Scotch Shortbread Cookies

3/4 c. butter, softened
1/4 c. sugar
2 cups flour

Cream together the butter and sugar. Work the flour in with your hands. Chill. Roll the dough to 1/3 - 1/2 inch thick. Cut into desired shapes. Place on ungreased baking sheet and bake in a 350 preheated oven for 20-25 minutes. (The tops will not brown.)

Shortbread Recipe

* 8 ounces butter (2 sticks), room temperature
* 1/2 cup confectioners' sugar
* 2 cups all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon vanilla extract

Combine all ingredients; use hands to knead until ingredients are blended. Press into ungreased pans (or chill and roll out to about 1/2-inch on a floured board and cut into shapes). Bake at 325 for about 20 minutes, or until lightly browned.
Cut into wedges while warm or break apart.

This crisp, thick, and buttery cookie is an old-time delicacy from Scotland. If desired, you can tint the dough in assorted colors before chilling. These are great cookies for tea parties or the holidays!
